christmas bakery



Hi guys!

Past weekend we had a Christmas party with all our neighbors here from the house downstairs in the hall. We put up a plastic tree, decorated the mail boxes and everyone brought something to eat or drink to add to the buffet. There was chili con carne, focaccia, brandy punch and whatnot. I was in charge of the dessert and as I love to bake I decided to bring three different treats: cookies, coconut macaroons and cupcakes.





Above you can see Nutella (choco-hazelnut spread) cookies. Very yummy, very easy! I found the recipe online, the German version can be found here.
Simply melt 200g Nutella (or other choco-hazelnut spread) in the microwave or in a double boiler. Then add 150g flour, 1 tsp baking powder, 1 egg and 50g sugar. Mix until the dough feels like play dough.
Then form little heaps of dough or cut out cookies, put them on a tray with baking paper and bake them in the pre-heated oven at 150° C for 10-20 minutes (depending on how crispy you want them to be).
Later on you can add couverture and stuff if you like.





Here we have the coconut macaroons, oh I love them! They are to die for, so delicious! And also really easy to make, I got the recipe from a co-worker: beat 3 eggwhites until stiff. Add a squirt of lemon juice and let 200g sugar and a pinch of salt trickle in while whisking. After that fold in 200g grated coconut. Form little heaps on a tray with baking paper (works best with two teaspoons) and bake them in the pre-heated oven at 175° C for 20-25 minutes.
Afterwards you can dip them into couverture if you like.







And last but not least I made these super-yummy Raffaelo (coconut comfit) cupcakes! Mmhhh, my favourite cupcakes ever! I have already posted the English recipe some time ago here and the German version can be found here.
