Sorry, I actually wanted to post this yesterday, but instead I spent the day with my mum, which definitely had priority to blogging as family is always first. ;)
Anyway, here is the recipe for a super yummy strawberry cheesecake with no baking involved - perfect recipe for summer and very easy and quick to make (because most of the work is done by the fridge).

For the base
- 50 gr wholemeal tea biscuits
- 50 gr amarettini biscuits
- 60 gr melted butter
- 2 tsp. brown sugar
For the topping
- gelatine (4 sheets)
- the juice of 1 lemon
- 500 gr cream cheese
- 100 ml elderflower sirup
- 4 tbs. vanilla sugar
- 200 gr crème fraîche
- 500 gr strawberries
And here we go with the recipe steps.
For the base put the biscuits into a freezer bag and crush them to crums. Mix with the butter and sugar. Line a low cake pan or baking tray with cling foil or baking paper, then put in the mixture and press in firmly.
For the topping mix all ingedients with a blender until you have a smooth cream.
Spread the cream on the base, then put everything into the fridge for a minimum of 2 hours.
Wash and cut the strawberries...
... and put them on the cake.
